Are the animals ever fed antibiotics?
No, the animals we butcher have NEVER had any antibiotics. There are times when an animal does need to be treated with antibiotics but they are NOT butchered for our customers. The animal is marked in the book and shipped to the cattle sale in the fall.
Do I have to order a whole side?
No, we have 1/4's as well as cuts and packages available.
Is it cheaper to buy a side of beef?
It is cheaper to buy a side of beef then buying a 1/4 or individual cuts
How much freezer space do I need?
1/4 of beef needs 4.2 to 7.0 square feet of freezer space.
1/2 of a beef needs 8.5 to 14.0 square feet of freezer space
A whole beef needs 16 to 30 square feet of freezer space
What are the different cuts of beef?

Beef prices by the quarter, half or whole are based on hanging weight at the time of slaughter. As the beef hangs in the cooler it will lose some moisture and later much of the fat and bone will be removed, so that the weight of beef that you receive will be less than the hanging weight at slaughter. The weight of the meat that you receive is approximately 70% of the hanging weight. The loss is due to trimmings and bone scraps.
A full side of beef (best value). We have one 314 lb side available this week x $5.50/lb hanging weight.
You get:
Steaks (Rib, Sirloin, NY strip, Wing, Blade and Tenderloin) approx. 50 steaks total
Roasts (Prime Rib, Sirloin tip, Eye of Round, Inside Round, Outside Round & Cross Rib) approx. 12 roasts total
Stew meat packed in 1 lb packs approx. 20 packs
Short ribs approx. 5 packages
Soup bones approx. 5 bags
Lean ground beef (About 90 lbs packaged in 1 lb packs).
